Sattu-Balanced Nut Butter Spread Base

- Base Mix
- 150 g Almond Butter
- 120 g Sattu (Roasted Gram Flour)
- 15 g Linseed/Flaxseed (Whole or Ground)
- 2–3 g Sea Salt
- Liquids
- 15 g Lemon Juice (optional)
- 0–15 g Water (as needed)
Method
- Make the base: In a bowl, mix sattu, flaxseed, and salt until uniform. Stir into almond butter until fully combined and thick.
- Store: Transfer to a clean, dry, airtight jar. Keep the jar dry (no water added to the storage jar).
- Portion: Scoop 45 g of the base into a small bowl.
- Optional lemon: Add 15 g lemon juice and mix thoroughly.
- Hydrate to spreadable: Add water gradually up to 0–15 g, mixing until spreadable.
- Rest + remix: Wait 30–60 seconds, then remix (sattu and flax continue to hydrate and thicken slightly).
Body & Sensory Notes
- Odour profile: Generally mild/neutral; lemon is optional for a clean finish.
- Texture: Thick, creamy base; hydrates into a smooth spread with staged water addition.
- Energy: Higher-fat plus fibre/protein; typically steadier than refined spreads.
